White Bean Bruschetta

This impressive dish is not only fun to make – it is also perfect to make for any last-minute visitors.

10 minutes to prepare and cook.

Method:

1. Mash the butter beans roughly with the garlic and add enough of the oil to make a paste. 2. Stir in the lemon juice, red peppers, tomato paste, sunblush tomatoes, black olives and black pepper.

3. Slice the ciabatta bread and toast under the grill. 4. Drizzle with any remaining oil and serve topped with the butter bean mixture.
