This recipe is a great way to jazz up a traditional pasta bake, using iconic Tex Mex flavours. It only takes 25 minutes to cook and serves 4.
- Pre-heat the oven to 180°C, Gas 4. Lightly grease an oven proof dish.
- Brown the mince, onion and garlic in a large pan. Stir in the chilli powder and tomatoes. Simmer for 5 – 8 minutes.
- Stir in the macaroni and 400ml of water (fill up the empty chopped tomato can). Bring to the boil and add the sweetcorn and kidney beans.
- Spoon into the ovenproof dish, scatter with cheese and bake for 15-20 minutes until bubbling and golden brown on top.
