Quesadillas

If you’re looking for a midweek meal, try these super easy quesadillas!

Method:

  1. Place one of the flour tortillas onto a chopping board or plate.
  2. Mix together the cheese and vegetable ingredients in a large bowl. Spread ¼ of the mixture over the tortilla and top with another wrap. Repeat 3 times using the remaining ingredients.
  3. Heat a large non-stick frying pan and carefully place the filled tortilla into the pan. Cook on a medium heat for 3 – 4 minutes, until golden. Gently turn over the filled tortilla, and cook on the other side until golden and the cheese melted. Remove from the pan and keep warm.
  4. Repeat with the remaining quesadillas. Slice into wedges and serve.
