Overnight Oats – Classic Rhubarb and Yogurt by Theo Michaels

How great are overnight oats; the gift you give yourself the day before! Using canned fruit has two main benefits; firstly it extends the shelf life of the oats so if you don’t get round to eating them they’ll last a couple of days in the fridge without going bad, and secondly, they are incredibly convenient that virtually all the ingredients are store cupboard items!

Method:

  1. Simply mix all the ingredients together (saving 1 tbsp of honey and omitting the seeds/nuts) in a jar or glass and place into the fridge overnight, or for at least 4 hours.
  2. When you’re ready to eat, remove the oats from the fridge (add a splash of milk if too thick)
  3. Top with a few more chunks of canned rhubarb, nuts or seeds and a drizzle of honey.
