Course: Starter - Dish: Vegetarian - Serves: 2
Using canned apricots guarantees a cooked texture of the apricots and removes all the faff of preparing them, coupled with the earthy notes of a light soft goats cheese and the thyme – this is a wonderful meze dish to share and also works well on the BBQ.
Method:
- Drain the apricots and add to a bowl; season with salt, pepper, drizzle of olive oil and a good tbsp of thyme leaves and mix together.
- Heat a griddle pan so it's almost smoking then carefully place the apricot halves cut side down onto the griddle pan for a couple of minutes until they are nicely charred. Turn them over for a minute then remove turning then so cut side is facing up.
- Neatly spoon just enough goat cheese into the centre of each apricot (where the stone used to be). Once done, season with salt and pepper, a little drizzle of olive oil and few more thyme leaves. Decant onto a serving dish.
- Note: a drizzle of honey can be a nice touch over the top aswell!
