Butterbean & Tuna Bake

A riff on a traditional Cypriot recipe – Gigantes Plaki; baked butter beans in tomato sauce, this one has the addition of tinned tuna for extra protein, perfect as side dish or served with rustic bread for a hearty meal. Serves 2 as a main or 4 as a side.

Method:

  1. Pre-heated oven 180FAN 
  2. In a 1.5litre high sided baking dish pour in the butter beans, half the chopped parsley, sugar, two-thirds of the canned tomatoes, season generously and add a drizzle of olive oil. 
  3. Mix together then add pockets of tuna and drizzle over the remainder of the tomatoes. 
  4. Finally crumble over the feta and bake in the oven for around 40minutes.
  5. Leave to set for a few minutes and garnish with more parsley, feta and drizzle of olive oil.
