Brazilian Style Blackbean Stew topped with Crispy Pork Belly

A comforting soul food recipe to warm you up and topped with airfried crispy pork bites to keep you coming back for more!

Method:

  1. Mix the pork belly with half the paprika, lots of seasoning, a drizzle of olive oil and the honey. Pour into an airfryer and set the time for 15minutes at 200c – shaking half way through (check a few minutes before the end to ensure they are not burnt. Once done, open the drawer and turn off the air fryer and leave to rest until the stew is cooked. 
  2. While the pork belly is cooking; fry the diced spam in olive oil for a few minutes to colour then add the onion, chilli and fry for a few more minutes to soften the onion, stir in the paprika. Then pour in the black beans, tomatoes, stock cube plus half can of water and half the paprika, thyme and oregano. Leave to simmer on low for 6-8 minutes until thick and glossy.  
  3. To serve, spoon the stew into bowls, top with a portion of the pork belly and garnish with chopped coriander.
