Ruth’s Tuna Pasta

"This is a bit of a twist on an old favourite – adding the olives gives the dish a bit more bite and texture and it’s great served with a crisp green salad."

Method:

1.    Following the packet instructions, cook enough pasta for two and while it’s boiling finely chop the red onion
2.    Add to a mixing bowl the tuna steak and mash slightly so that it mixes well with the pasta, then drain and add the sweet corn and olives
3.    Once the pasta is cooked al dente, drain and add to the tuna mixture along with a dollop of mayonnaise or cream cheese
4.    Season to taste with salt and black pepper, then divide equally
