Pancake Day is on the way (8th March 2011) and, as everyone prepares to go flipping mad, Canned Food UK has come up with two tasty recipe suggestions that can also contribute to your 5-A-DAY.
For those with a sweet tooth, Canned Food UK’s Toffee Apple Pancakes are sure to hit the spot and for an interesting savoury alternative try the Mini Dip Pancakes, which include sweetcorn and canned peas, and can be eaten with Greek yoghurt or salad cream.
Quick to prepare and featuring a huge range of varieties, canned foods are perfect Pancake Day fillings. “Pancakes are a great way of introducing fruit and vegetables, especially for kids, as they’re fun to make and eat,” says Steve Gogerty of Canned Food UK.
“Lemon and sugar is a firm favourite in UK households, but there are so many other options that can help to make Pancake Day go with a bang. Canned berries like strawberries, raspberries and summer fruits are a great alternative while canned mango and pineapple can add an exotic twist. Canned foods are a great addition to most meals, as they’re convenient, delicious and nutritious.”

• One of the oldest Pancake Day races is said to of taken place in 1445 in Olney, Buckinghamshire, a tradition that continues to this day
• Amongst the weird and wonderful events that take place on Shrove Tuesday is the Royal Shrovetide Football match held in Ashbourne, Derbyshire. The game takes over the entire town and there is no limit on the number of players involved
• William Shakespeare mentions pancakes in a number of his plays including As You Like It
• The record for the largest pancake toss is 405 and was achieved by Bram Zwiers in the show Mooi! Weer de Leeuw in Almere, Netherlands, on 24 October 2008.
